The sugar and the salt are up to you - add to taste really - I like it a little sweeter so I add sugar.

The Salad is pretty simple really, the hardest part is toasting the sunflower seeds which you can do easily by placing them in a totally dry frying pan, and turn up the heat! Toss them around until they begin to brown (after a couple of mintues) and leave to cool.

The asparagus is also simple, I like to shallow fry in a little butter for about 4 minutes, this makes them really tasty but you can also steam them or boil if you prefer.

As for the salad - it's just a cse of chopping up all the ingredients above and putting it all together on a plate.

If you can't manage that - well there really is no hope for you!!! lol

American Sliders and Fries

OK So this is what we in the UK would call Burgers and Chips! But as I'm in America I have to do the right thing and go with the flow - they are called sliders because they are essentially mini burgers.

We did these yesterday in honour of the 43rd Superbowl (American Football!)

Will make 8 sliders/burgers

Ingredients:

Burgers:
1 lb minced Beef Salt and Pepper

Additional fillings:
Red Onion Cheese slices Tomato Crispy bacon
Lettuce

Servced with corn on the cob and chips

Add some salt and pepper to the minced beef and blend in with your hands, then take a small handfull and shape into curcular patties and place to one side.

Heat a frying pan with a little oil and place the meat patties in to cook for about 6-7 minutes on each side until the look done to your liking.

Slice some tomato, onion, lettuce and other fillings to your liking, Pat uses pickled gherkin which I personally think is just nasty!

Boil some water and drop the corn in for about 6 minutes

Put the fries (chips) into a hot oven as per the instructions on the packet - we cheated and bought oven chips! If you don't have a large enough pan to fit it all in, you can boil the leeks separately and add together when you mash them.

Once the potatoes are on, dry fry the lamb mince in a large frying pan (I use a deep one or you could use a wok).

Once the mince has gone brown, drain off the excess fats as this is a nice low fat meal!

Add in the onion and fry for another 3-5 minutes

Put the peas and carrots on to boil for 5-7 minutes.

Add the stock and tomatoes then simmer this for about 10 minutes until the juices have all soaked into the meat and it's not all liquid any more

Take the potato and the leek and mash together, I also add a knob of butter and a dash of milk, salt and pepper to taste - this stops the mash being too dry.

Transfer the meat/tomato to an ovenproof dish and use a spoon to push it into the bowl

Add in a layer of peas and carrots (you don't have to do this, but I prefer to as it makes enough for 4 people and there is only me and hubby so we get 2 meals from this and the veggies are now included!) If you prefer you can serve the veggies on the side instead.

Add the mashed potato and leeks to the top and use a fork to ensure there is an even covering and also it makes lovely ridges that brown in the oven.

Transfer to the over and cook for a further 15-25 minutes (until the potato is nice and brown - mine takes 20 minutes but I have a convection over which is super fast!)

Serve with gravy!

Please note: this dish can be frozen if you make too much, to re-heat later take out of the freezer and leave to thaw for a few hours (best to take it out in the morning) and re-heat in the oven (cover with tin foil so it doesn't burn) for about 40 minutes at the same temp as above.

<img style="margin: 0px auto 10px; If you use tagliatelli, I use 3-4 balls per meal.
1 carton double cream - you can use single but double tastes better!
a good handful of chopped parsley.
Olive Oil

Place a pan of salted water on to boil

Slice mushrooms, and dice a white onion

Cut up bacon into small squares

When the water is boiling add the pasta (about 2-3 handfuls).

Use a deep frying pan if you have one – add a little olive oil and fry the onion, then add the bacon and cook for 4-5 minutes, then add the mushrooms and cook for a few more minutes until the mushrooms are done.

Turn the heat down and put the lid on, leave for 5 minutes but stir often.

Chop up some parsley into small chunks.

Pour in the cream and stir, add half the parsley, bring to the boil then turn down – do not let it burn!!

You can use cornflour to thicken if you prefer, I like to do this.

Add the pasta when drained and the last of the parsley, stir in and serve.
